Sauces and Gravies

Brown Gravy
Drippings from Roast
Flour
Pepper
Salt
Kitchen Bouquet
Water

Take pan with drippings off the heat,  Let cool for 10 minutes. Add flour till slightly thickened. cook over high heat stirring frequently for 10 minutes.  Add water 1/2 C at a time till its the consistency for gravy. Continue cooking over high heat.  Add 2 drops of kitchen bouquet and pepper.  Add salt to taste.


Easy Gravy
1 Can Cream of Mushroom Soup
1 pkg Brown Gravy Mix
1 Soup Can of Milk

 Mix well. Heat till hot.


Peppercorn Sauce
2 T Butter
2 T Minced Onions
1/3 C Sauterne
1/2 C Heavy Cream
1 1/2 T Peppercorns Broken
1/4 t Tarragon

Melt butter in sauce pan being careful not to burn.  Saute onions until tender.  Add sauterne and reduce to 2 T. Stir in cream, peppercorns, and tarragon. Add salt to taste.  Cook until reduced and thickened. Serves 4.
