Banana Bread
1 Stick (1/2 Cup) Butter3 Large Ripe Bananas
2 Eggs
2 Eggs
1 t Vanilla Extract
2 C All Purpose Flour
2 C All Purpose Flour
1 C Brown Sugar
1 t Baking Soda
1/2 t Salt
1 t Baking Soda
1/2 t Salt
1 t Cinnamon
1/2 C Chopped Walnuts (Optional)
Add stick of butter to a large bowl, microware for 1 minute or until melted. Add the bananas to the bowl with butter and mash with a fork. Add vanilla and eggs to the bowl, mash and stir until well combined. In a separate bowl whisk together the dry ingredients. Add to creamed mixture, mix with a spatula until just combined. Stir in nuts. Pour into well greased bread pans. Bake at 350° for 45-55 minutes. Remove from pan and cool on rack.
2 C Graham Flour
2 T Sugar
1 t Baking Soda
3/4 t Salt
1 C Buttermilk
1 C Molasses
Mix dry ingredients in large mixing bowl. Add buttermilk and molasses. Mix thoroughly. Pour into greased bread pan and bake in 350° oven for one hour. Makes 1 loaf.
3/4 C Corn Meal
1/4 C Sugar
2 t Baking Powder
1/2 t Salt
1 C Milk
1/4 C Oil
1 Egg
Combine dry ingredients. Stir in milk, oil and egg. Mix just till moistened. Pour into greased 8" square pan. Bake at 400° for 20-25 minutes. Serves 9.
*Double recipe and use a 9 X 13" pan.
2 1/2 C Flour
2 T Sugar
1 t Baking Soda
1 t Baking Powder
1/2 t Salt
1/3 C Currants
3/4 C Buttermilk
Cut margarine into flour, sugar, baking soda, baking powder, and salt until mixture resembles fine crumbs. Stir in currants and buttermilk to make a soft dough. Turn onto lightly floured surface; knead until smooth, 1-2 minutes. Shape into round loaf, about 6 1/2 inches in diameter. Place on greased cookie sheet. Cut an X about 1/4 through loaf with floured knife. Bake at 375° till golden brown, 35-45 minutes. Brush with margarine if desired.

1 C Buttermilk or
1 C Milk with 1 T vinegar (Let sir for 1 hour.)
Cut shortening into dry ingredients. Add milk. Mix just till combined. Heavily oil a small baking dish. Oil hands and pat dough into 6-7 large biscuits placing each biscuit in oil and turning over once. Bake at 450° for 15-20 minutes or till slightly brown on top.

8 C Whole Wheat Flour
Mix very warm water with yeast, honey, oil, salt and 4 cups of the flour. Mix well and let sit for about 10-15 minutes or until double the size. Then knead in other 4 cups of flour 1 cup at a time until all flour is used and dough no longer sticks to side of bowl. (This takes 15-20 minutes of kneading, so don't give up!) Shape dough into loaves and place in greased pans.
9 X 5 X 2 3/4 - 3 loaves, 350° for 35 minutes.
9 1/4 X 5 1/4 X 3 - 2 loaves, 350° for 35 minutes.
16 Rolls, 350° for 20 minutes.
